Calling All Foodies – Easy Pancake Recipes

American Style Pancakes

These are a particular favourite of mine! I either have them with bacon and eggs, topped off with maple syrup or I’ll have them with Nutella and strawberries. Yum!

Total Time: 15 minutes

Serves: 4 – 6

Ingredients

256g Flour

4 Large eggs

250ml Cup milk

128g Sugar

1tsp Vanilla extract

1 Non-stick pan (Oil if preferred to cook)

Method

  1. Whisk together the eggs, milk and vanilla until well mixed
  2. In another bowl, mix together the flour and sugar
  3. Slowly add your wet mixture to the dry mix of flour and sugar, whilst whisking (so that no lumps form)
  4. Once well mixed, heat your pan on a medium heat and add oil if preferred
  5. Cook to preferred thickness For best results, serve warm with preferred toppings

This recipe makes 10-12 large pancakes

Banana Pancakes – taken from the SPAR website

As someone that doesn’t really love banana’s, I love these pancakes as a “healthier” alternative. Sean also loves them!

Ingredients

2 mashed bananas – make sure they’re over-ripe!

2 beaten eggs

1/2tsp baking powder

1/2tsp cinnamon

Pinch of salt

Oil or butter, for frying

Method

  1. Mash 2 bananas with a fork in a bowl
  2. Mix in the eggs, baking powder and cinnamon
  3. Heat a non-stick pan and lightly coat in oil or melted butter and spoon in some of the batter
  4. Cook for 1-2 minutes on each side or until golden brown
